Ginger Chicken

4 boneless skinless chicken breasts (about 1 lb)

1/2 c mayonnaise

1tablespoon soy sauce

1/4 tsp ground ginger

1/8 tsp cayenne pepper

 

 

Flatten the chicken to 1/4-in thickness.

Place on a broiler pan rack.

Broil for 3 minutes on each side.

Combine mayonnaise, soy sauce, ginger and cayenne.

Brush mixture over chicken.

Broil 2 -3 minutes longer on each side or until

juices run clear.
