 Shrimp & Scallops with Linquine

 ingredients:

1 lb scallops

1/2 lb shrimp

2 cup fresh snow peas

½ cup chopped green onion

3 cloves minced garlic

3 tbsp olive oil

3 tbsp butter

2 tsp parsley

1 tsp basil

1/4 tsp red pepper

1 small tomato, seeded and chopped

10 oz linquine, cooked

3 tbsp Parmesan cheese

 

 

 

 instructions:

Cut scallops in half.

Cook onions and garlic in olive oil and butter for 30 seconds.

Add half of shrimp and scallop mix, parsley, basil, and red pepper - cook for 3 or 4 min. Repeat with second half of shrimp and scallops.

Return all to skillet. Add snow peas and tomato - cook for 2 mins.

Toss with linquine. Sprinkle with cheese.

 

A fast and easy entree that is delicious and looks great.
