Snickerdoodles
Oven 400°
½ c. butter or margarine 2 tsp. cream of tartar
½ c. lard (or Crisco) 1 tsp. baking soda
1 ½ c. sugar ¼ tsp. salt
2 eggs 2 T. sugar
1 tsp. vanilla 1 tsp. ground cinnamon
2 2/3 c. flour
Beat butter and lard until light; add 1 ½ c. sugar and
beat until fluffy. Beat in eggs and vanilla.
Sift together flour, cream of tartar, baking soda and salt; add
to beaten mixture.
Combine 2 T. sugar and cinnamon.
Shape dough in small balls, about 1", and roll in sugar-cinnamon
mixture. Place 2" apart on ungreased baking sheet. Bake at
400° for 8 - 10 minutes (cookies flatten during baking). Cool
on racks. Makes about 6 dozen.
